Spanish white bean salad


Ingredients


1 kg
Arrocina/judion beans (cooked)
5 bulbs
Fennel (fine sliced)
5
Red onion (fine sliced)
2 tins
Piquillo peppers (sliced)
3 bunches
Spring onions (finely sliced)
2 bunches
Mint (chiffonade)
100 ml
Sherry vinegar
300 ml
Olive oil










Method


1.      Whisk together the oil & vinegar & lightly season.
2.      Mix together the remaining ingredients & dress with the oil & vinegar.
3.      Check the seasoning.
