2 kg plain mashed potato
12 tbsp plain flour
12 eggs
16 egg whites
200 ml milk
200 ml double cream
Seasoning
Method
1. Place the potato in a mixer with the flour & switch on at a slow speed until the potato is cold.
2. Add the milk, cream & whole eggs.
3. Whisk up the egg whites to soft peaks & fold through the potato mix.
4. Adjust the seasoning.
5. Cook in bilini pans under the grill just before serving.
