Olive Crust


1 white loaf into fresh crumbs
250g chopped olives
75g chopped parsley
4 tsp chopped thyme
4 tsp chopped basil
2 cloves crushed garlic
Juice of 2 lemons
200g butter
Salt and cayenne pepper

Method

1        Make brown butter with the butter and lemon juice.
2        Add all ingredients & process in a food processor until bound together.
3        Chill for 1 hour.
4        Roll between 2 sheets of parchment paper.
5        Allow to set up in the fridge before cut to fit the portion.
