Moroccan potato & olive salad



Ingredients


3 kg
Rosevelt potatoes (cooked & sliced)
5 bunches
Spring onions (sliced)
500g
Cherry vine tomatoes ( quartered)
200g
Capers
500g
Black olives (pitted)
1 bunch
Coriander (chiffonade)
1 bunch
Flat parsley (chiffonade)
100 ml
Lemon juice
300 ml
Olive oil
1 tbsp
Ground allspice






Method


In a large bowl gently combine all the ingredients & adjust the seasoning.
