Hot pot potatoes


Ingredients


230g
Butter (unsalted)
900g
Maris piper potatoes (peeled & sliced)
1
Onion (sliced)
2
Carrots (sliced)
2 sprigs
Rosemary (chopped)
















Method


1.      Pre-heat the oven to 200ÂșC.
2.      Melt the butter without browning.
3.      Brush a large black pan with melted butter.
4.      Place a layer off sliced potatoes on the bottom of the pan & season lightly.
5.      Build up layers of the onions, carrots, potatoes & rosemary seasoning as you go & drizzling with butter until the pan is stacked full.
6.      Take into account that the potato will fall as it cooks so the finished item will be a lot flatter than before it went into the oven.
7.      While in the oven press down the potato at regular intervals to ensure a good finish.
8.      It is cooked when a sharp knife slides through easily.
