baked goats cheese soufflé


100g Butter (unsalted)
100g Plain flour
450 ml Milk
125g Goats cheese
5 Egg yolks
6 Egg whites
Seasonings

Method:
1.      With the butter, flour and milk make a thick béchamel.
2.      Puree the cheese and add to the béchamel while still warm so that it dissolves.
3.      Fold in the egg yolks.
4.      Whisk up the egg whites and fold into the mix.
5.      Grease the moulds the soufflés are to be cooked in with butter and flour.
6.      Fill the moulds and bake at gas 3-4 (350oF/180oC) for 45mins.
