Salt cod fish cakes



Ingredients



500 ml milk
2 red chillies
1 bunch coriander (picked stalks reserved)
3 cloves garlic (crushed)
5 potatoes
2 fillets salt cod
2 cloves garlic (crushed)


Method
1        Infuse the milk with the chillies and coriander & bring to a simmer.
2        Add fish to the hot milk and infuse, when poached remove from the heat & allow to infuse until cold.
3        Cook the potatoes in boiling salted water with the garlic.
4        Puree the potato & garlic in a mouli and add cold cod flaked with chopped coriander leaves and crushed garlic.
5        Mix with the milk infusion until the desired texture is reached (not all the milk may be needed).
6        Adjust the seasoning.
