Bread - Brown

120g or
60g
fresh yeast
dried yeast
120g
salt
125g
melted butter
400ml
milk
4tbsp
black treacle
2-2½lt
water
2kg
strong white flour
2kg
brown flour
400g bread seeds
= 200g sunflower seed, 200g pumpkin seeds
4 tbsp
black onion seeds







Method


1.      Mix together the flours & salt.
2.      Dissolve the yeast in warm water.
3.      Warm in a pan the butter, treacle & milk.
4.      In a mixer add the yeast to the flour mix.
5.      Pour in the warmed milk mix, while beating at a slow speed.
6.      Add the seeds & water to the required consistency & beat at medium speed until it becomes resilient.
7.      Allow to prove in a warm place until it doubles in size.
8.      Knead into loaves & prove again before baking at 180-200ÂșC until tapping the bottom of the bread  reveals a hollow sound
