Salting brine


Ingredients


5 lts cold water
1½ kg rock salt
500g brown sugar
15 black peppercorns
15 juniper berries
150g salt pietre
Bouquet garni


Method
1.     Bring to the boil all ingredients.
2.      Immerse the meat in a sterilized container, and change every week.
3.    For best results marinade for approx 3 weeks depending on size of meat.
