Red pepper coulis


6 red peppers (roasted & skinned)
100 ml 0live oil
100g butter (unsalted)

Method

1        Skin and de-seed the peppers.
2        Place in a blender and puree.
3        Add the butter and olive oil and blend again.
4        Finish with diced pepper.
5        Adjust the seasoning & consistency with vegetable stock.
