Pease pudding with goats cheese


Ingredients


1
Onion (fine diced)
30 ml
Olive oil
2 cloves
Garlic (crushed)
200g
Green split peas(soaked overnight)
1
Ham hock
300 ml
Water
½
Nutmeg (grated)
80g
Goats cheese (diced)










Method


1.      Sweat the onion & garlic in the olive until soft.
2.      Add the peas & ham hock.
3.      Cover with the water & bring to the boil, lower the heat & simmer until the ham is cooked.
4.      Remove the ham & set aside with the cooking liquor.
5.      Puree the peas, add the nutmeg & season.
6.      To serve heat through using some of the liquor to moisten, then stir in the goat’s cheese.
