GARLIC, Olive oil mash



3 kg
Potatoes (cut & rinsed)
750 ml
Double cream
6 cloves
Garlic (crushed)
450g
Butter
150 ml
Olive oil






Method


1.      Bring the potatoes in a pan of cold, salted water & bring to the boil, lower the heat & simmer until the potatoes are tender.
2.      When cooked drain the potatoes.
3.      Heat the cream until almost boiling then remove from the heat.
4.      Mash the potatoes; add to a clean warm pan.
5.      Add the garlic & warm cream while beating.
6.      Beat in the butter & olive oil & season.
7.      This can also be done in an electric mixer.
