3 kg | Potatoes (cut & rinsed) |
750 ml | Double cream |
6 cloves | Garlic (crushed) |
450g | Butter |
150 ml | Olive oil |

Method
1. Bring the potatoes in a pan of cold, salted water & bring to the boil, lower the heat & simmer until the potatoes are tender.
2. When cooked drain the potatoes.
3. Heat the cream until almost boiling then remove from the heat.
4. Mash the potatoes; add to a clean warm pan.
5. Add the garlic & warm cream while beating.
6. Beat in the butter & olive oil & season.
7. This can also be done in an electric mixer.
