Salmon rillettes


Ingredients


450g
Salmon  (poached & flaked)
125g
Smoked salmon (diced)
2
Egg yolks
2 tbsp
Olive oil
½ tbsp
Lemon juice
65g
Natural/Greek yoghurt
100g
Butter(unsalted)
½ bunch
Chives/tarragon (chopped)










Method


1.      In a food processor blend the egg yolks, yoghurt & lemon juice.
2.      Then add the butter & olive oil.
3.      In a bowl mix the salmons with the yoghurt mixture & add the herbs.
4.      Correct the seasoning.
