Bread - White

120g /60g
fresh yeast/ dried yeast
125g
melted butter
4kg
T55 white strong flour
80g
sugar
120g
salt
2-2½lt
water


2kg
strong white flour
70g
live yeast
1 tbsp
salt
2pts
water (approx)







Method


1.      Mix together the 2 kg flour & salt.
2.      Dissolve the 70g yeast in warm water.
3.      Warm in a pan the butter, treacle & milk.
4.      In a mixer add the yeast to the flour mix.
5.      Pour in the warmed milk mix, while beating at a slow speed.
6.      Add water to the required consistency & beat at medium speed until it becomes resilient.
