Ingredients
| 1 kg | Frozen peas (de-frosted) |
| 150g | Butter (unsalted) |
| 2 tsp | Sugar |
| 4 tbsp | Double cream |

Method
1. Cook the peas in boiling salted water until tender.
2. Place in a food processor with the remaining ingredients & blend until smooth.
3. Check & adjust the seasoning as required.
